Meaty Mushroom Wraps

Ingredients

  • Per person:

  • 100g button or portobello mushrooms, sliced about 1cm thick

  • ½ a medium red or brown onion, peeled and cut into 4 wedges

  • 2T olive oil or other mild vegetable oil, divided

  • 1/2 t ground cumin

  • ½ t paprika, regular or smoked

  • 1/4t salt

  • 1 wrap or pita bread (gluten-free if required)

  • Large handful thinly sliced red cabbage

  • Salt and pepper

  • Dash of lemon juice or vinegar of your choosing

  • ¼ cup hummus

  • ¼ cup grated Angel Food dairy-free cheddar

  • Fresh herbs, e.g. mint and coriander

Steps to make Meaty Mushroom Wraps

  1. Preheat oven to 180 degrees. 

  2. in a mixing bowl, coat the mushrooms and onion with 1T vege oil. Add the cumin, paprika and salt, and mix gently.

  3. Spread the mushrooms and onion out in a baking dish, and bake until tender and browned, approx. 15 minutes. 

  4. Combine the cabbage with 1T oil and a dash of vinegar or lemon juice in a bowl. Season to taste with salt and pepper. 

  5. To serve, spread wrap with hummus. Top with cabbage, grated cheese, mushrooms, onion and fresh herbs.
