Kimchi & Feta Pastries

Ingredients:

· 2 sheets of vegan puff pastry, cut into 12 circles (diameter about 10cm)
· About ¼ cup Living Goodness Kimchi
· 24 x 1cm cubes of Angel Food Feta

· ¼ cup plant milk
· 1 tsp maple syrup

Method:

-Preheat the oven to 180 degrees Celsius.
-Grease a muffin tray and fit your 12 rounds of pastry into each hole to make little cups.
-Mix together milk and maple syrup in a small bowl and brush mixture lightly over the pastry cups.
-Add about 1-2 tsp of kimchi to each cup and top with two cubes of feta.
-Bake in the oven for 10-15 minutes until the pastry is golden and puffy and the feta is melted.
Serve hot.
