Grilled Sesame Pineapple

Fresh Pineapple is such a treat – sweet, juicy, tangy, and tasty. Here we’ve fancied it up (but very simply) by grilling it, topping it with our delicious plant-based sour cream and toasted sesame seeds.

Ingredients:

1 fresh pineapple

Neutral-flavoured vegetable oil

¼ cup Angel Food plant-based sour cream

1 teaspoon brown sugar

1 tablespoon sesame seeds, toasted in a dry pan until golden and fragrant

 

Directions

1.     Using a large sharp knife, cut the ends and skin off the pineapple. Cut the pineapple in half top to bottom, and remove the core by making a ‘v’ shaped cut. If you have a pineapple corer, use that before halving the pineapple.

2.     Cut the pineapple into slices approx. 1cm thick.

3.     Heat a suitable pan – ideally a ridged grill pan, so you get nice dark lines on the pineapple, or a toasted sandwich machine with ridges.

4.     Brush the pineapple slices with oil, and cook on the preheated pan until the fruit is starting to caramelise.

5.     Arrange on a platter and top with a dollop of sour cream, a pinch of brown sugar and a generous sprinkle of toasted sesame seeds.
