Vegan Nachos

Serves 4

Ingredients:

  • 2 packs corn chips

  • 1 onion, diced

  • 1 tbsp Mexican seasoning
    [Sub Mexican Seasoning with:
    - 1/2 tsp ground coriander
    - 1/2 tsp chilli powder
    - 1 tsp ground cumin
    - 1/4 tsp cinnamon
    - 1 tsp sweet paprika
    - 1/4 tsp pepper
    - 1/2 tsp salt]

  • 1 can red kidney beans, drained and rinsed

  • 1 can refried beans

  • 1 can chopped tomatoes

Method:

  1. Preheat the oven to 180 degrees Celsius. Heat some oil in a large fry pan. Add onion and soften for a few minutes. Add spices, beans and tomatoes, mix and simmer for 10 minutes. 

  2. Line the base of a baking dish with corn chips. Spread the bean mixture over the top of the corn chips and top with grated cheese. Bake in the oven for 20 minutes then top with the rest of the toppings including the Angel Food Sour Cream. Serve!
