Tiny Vegan Tacos

 

Ingredients:

  • 3 wraps/tortillas

  • 1 tbsp olive oil

  • 1/4 tsp Nutmeg

  • 1/8 tsp cinnamon

  • 1/2 tsp smoked paprika

  • 1/4 tsp chilli powder

  • 1 white onion, diced

  • 1 clove garlic, diced

  • 3 tbsp capsicum, diced

  • Vegan mince (we used Naturali)

  • 1/2 cup coriander

  • 1/3 cup BBQ sauce

  • Angel Food Grated Cheese/Cheddar/Smoked Cheddar to serve

Method

  1. Warm pan over a medium heat on the hob, add oil, wait for oil to heat up then add spices and cook for 1 minute, stirring gently with a wooden spoon.

  2. Add diced onion and cook until translucent. Add garlic and capsicum then stir through. Leave for 1 minute before adding mince, then cook for 7 - 10 minutes before adding coriander and BBQ sauce. Stir to combine ingredients and cook for an additional 5 minutes.

  3. While your mince cooks, cut wraps into small circles (you can do this using a cookie cutter or large drinking glass)

  4. Place your mini tortillas on a serving tray, fill with a tbsp each of mince and slaw, and a sprinkle of grated plain or smoked cheese.
