Dates Stuffed with Cream Cheese

Ingredients

  1. Fresh medjool dates

  2. Angel Food dairy-free cream cheese

  3. Orange zest

  4. Fresh or freeze-dried raspberries

Steps to make Dates Stuffed with Cream Cheese

  1. If the dates don’t already have the stones removed, use a small sharp knife to cut a slit in each date through to the stone, and then gently lever the stone out.

  2. Cut little blocks of cream cheese the same length as the slit in each date, and gently press one into each date.

  3. Top with fresh or freeze-dried raspberries, and orange zest. (If you don’t have a zester, just use a vegetable peeler - being careful to only get the orange part, not the white - and cut the resulting wide strips into very narrow strips. Or you could use a fine grater.)
