Dairy Free Broccoli Cheese Soup

Steps to make Dairy Free Broccoli Cheese Soup

  1. Melt the vegan butter in a large pot over low-medium heat and cook the onion until it’s slightly transparent. Add the garlic and cook for a further minute. Once fragrant, whisk in the flour and combine. 

  2. Slowly pour in the vegan chicken stock while whisking, then add the mustard powder, garlic powder and pepper. Turn it up to medium heat, and mix thoroughly before allowing it to cook for a further 5 minutes while stirring occasionally. 

  3. Add the carrots and broccoli and simmer for 20minutes until the veges are tender. 

  4. Put a small handful of cheese aside for garnish and add the rest to the soup and combine. Serve with a garnish of Angel Food Dairy-Free Cheddar Cheese.

Serving Suggestion:

  • Spread Angel Food Dairy-Free Cream Cheese on slices of bread topped with a sprinkle of paprika. Roll up the slices and add them to a skewer before toasting in the oven for approximately 5 minutes at 150°C.

  • ⅓ cup of vegan butter

  • 1 onion, finely chopped

  • 4 cloves garlic, finely chopped or minced

  • ⅓ cup of flour

  • 2 cups of liquid vegan chicken stock

  • 3 cups of soy, almond or rice milk

  • ½ teaspoon cracked black pepper

  • 1 teaspoon vegetable stock powder

  • 1 teaspoon mustard powder

  • 1 teaspoon garlic powder

  • 1-2 large broccoli, cut into small florets

  • 1-2 large carrot, peeled and chopped into thin strips

  • 2 cups of Angel Food Dairy-Free Cheddar Cheese
