Jewelled Couscous with Dairy-Free Mozzarella

Steps to make Jewelled Couscous

  1. Place 1 and a half cups of water into a saucepan. Add 2 tbsp of olive oil and 1 tsp of salt and bring to a boil. Remove from heat and stir in 1 and a half cups of couscous. Cover and leave to stand for 2-3 mins.

  2. Pour over the remaining oil and lemon juice, and fluff up the couscous with a fork. Add the couscous to a large serving plate.

  3. Gently mix in Angel Food Dairy-Free Mozzarella, and the rest of the remaining ingredients, serve and enjoy!

Cake Ingredients

  • 1 ½ cups of couscous

  • 100g Angel Food Dairy-Free Mozzarella, diced into small cubes

  • 4.5 tbsp of olive oil

  • 1.5 tbsp of lemon juice

  • 100g soft dried apricot, chopped

  • 1/2 cucumber, chopped

  • 1/2 large yellow pepper, deseeded and chopped

  • 100g pitted black olives or green olives, chopped

  • 100g sundried tomato, chopped

  • small bunch parsley, chopped

  • 12 cherry tomatoes, quartered

  • salt
