Cheesy Garlic Crumpets
A satisfying tasty snack or part of a cosy weekend lunch.
Ingredients:
6 crumpets
2T dairy-free margarine
1T Angel Food parmesan
1T fresh chives and/or parsley (plus a little extra to sprinkle on after baking)
1/4 t paprika (regular or smoked)
2 cloves fresh garlic, minced or finely chopped
Generous pinch of salt
½ cup grated Angel Food mozzarella
Instructions
1. Preheat oven to 200C.
2. Make the garlic butter by combining margarine, parmesan, chives/parsley, paprika, garlic and salt in a small dish. Mash together with a fork until combined.
3. Spread about 2t of garlic butter on to each crumpet, then cut crumpets in half.
4. Sprinkle a generous tablespoon of grated mozzarella on one half of each crumpet, then sandwich the other half on top.
5. Line the crumpet sandwiches up on a large piece of foil, cut side down.
6. Wrap tightly in foil, and bake for about 20 minutes until the cheese has melted.
