Zucchini, Carrot & Feta Fritters

Delicious gluten-free, egg-free fritters, perfect for weekend breakfasts and lunches.

Ingredients

  • 2 grated carrots

  • 2 grated zucchinis

  • 1 cup chickpea flour

  • 350ml water

  • 1 tbsp sunflower oil (plus extra oil for frying)

  • 2 tbsp Angel Food Parmesan

  • 150g crumbled Angel Food Feta

  • 3 tbsp chopped fresh garlic chives (optional)

Instructions

  • In a bowl mix the chickpea flour & Angel Food Parmesan.

  • Add water and oil, whisk until it forms a smooth batter.

  • Mix in grated carrots, zucchini’s and chopped chives,

  • Add cubed Angel Food Feta and stir through the batter.

  • Heat up non stick frying pan on medium heat, add oil, and dollop in spoonfuls of the batter. Fry the fritters until golden on both sides. Serve with your favourite sauce!
