1 orange or gold kumara
1 tsp vegetable oil
1 small onion
2 cloves of garlic
⅓ cup grated Angel Food Dairy-Free Mozzarella
Trim the ends off the kumara, and cut in half lengthwise. Microwave until soft - about 10 minutes.
Meanwhile, finely dice the onion, garlic and mushrooms, and saute them until cooked to your liking. Season with salt, pepper, and Angel Food parmesan. Remove from the heat.
Put the kumara cut side up on a baking tray. Press each half gently with a fish slice (or tofu slice as we call it in our house!) to flatten it evenly. This will make the kumara sit flat and give you maximum space for your delicious topping.
Stir the grated mozza into the onion and mushroom mixture, and place the mixture on top of the kumara halves. Pop under a very hot grill for a few minutes, until it starts to brown. Remove from the oven, garnish with chopped parsley, and serve.
