Oil Free Beetroot Hummus

This delicious oil free hummus is so tasty with cheese and crackers, perfect for a decadent vegan cheeseboard.

Ingredients:

  • 1/3 cup tinned beetroot, drained (you can use fresh beetroot just roast in oven first)

  • 2 Tbsp Angel Food Parmesan

  • 1 tin of chickpeas, drained

  • Squeeze of lemon juice

  • 2 Tbsp aquafaba

    Combine all ingredients in a food processor until desired texture is reached.

Instructions:

  1. If you would like to use fresh beetroot, preheat oven to 210C, place beets with skin on in a baking dish, cover with tinfoil, and cook for 45mins - 1 hour. Remove skin after cooking.

  2. Combine all ingredients in a food processor and blend until desired texture is reached.
