Oil Free Beetroot Hummus
1/3 cup tinned beetroot, drained (you can use fresh beetroot just roast in oven first)
2 Tbsp Angel Food Parmesan
1 tin of chickpeas, drained
Squeeze of lemon juice
2 Tbsp aquafaba
Combine all ingredients in a food processor until desired texture is reached.
If you would like to use fresh beetroot, preheat oven to 210C, place beets with skin on in a baking dish, cover with tinfoil, and cook for 45mins - 1 hour. Remove skin after cooking.
Combine all ingredients in a food processor and blend until desired texture is reached.
