3 medium avocados
100g grated Angel Food Dairy-Free Cheddar
2 Tbsp lemon juice
1 small red onion, finely chopped
1 tomato, finely chopped
1 clove minced garlic
1 handful of coriander, finely chopped
½ tsp cayenne pepper
½ tsp cumin
½ tsp smoked paprika
salt and pepper to taste
Cut the avocados in half, discard the pit, and scoop out the avocado flesh into a medium sized bowl, stir in the spices and lemon juice, and mash with a potato masher until you reach desired consistency.
Stir through the Angel Food cheddar, onion, tomato, garlic and coriander, season with salt and pepper to taste.
Let the guacamole sit at room temperature for about 30 minutes before serving to allow the flavours to meld.
