Alfredo Mediterranean Linguine
1/2 cup Angel Food Cheesy Sauce Mix
3 cups soy milk (use different plant-based milk for soy-free)
1/2 cup olives
1/2 cup sun-dried tomatoes
Handful fresh basil
1/2 cup artichokes
1 cup baby spinach
500g linguine pasta
Cook pasta as per instructions.
Whisk together soy milk and Angel Food Cheesy Sauce Mix in a skillet. Place over low-medium heat and cook until thickened, stirring regularly.
Drain pasta and then add to skillet. Add olives, sun-dried tomatoes, baby spinach, basil, and artichokes and stir through.
