Making creamy sauces and soups without adding dairy
In the habit of adding a dash of cream to sauces and soups when you want that creamy velvety taste experience? Worried you won’t be able to replicate that with your new dairy-free lifestyle?
Don’t worry, you can still enjoy creamy stuff without the cream! Try these for starters:
- Add a starchy vegetable – such as potato or sweet potato – or some skinless legumes – such as split peas or red lentils – and blend some or all of the mixture. These have the added health benefits of being low-fat and adding fibre.
- A dollop of tahini (sesame seed paste, used in hummus) or coconut cream added just before serving is delicious and satisfying. (And you can do a fancy swirl on top of the soup with it to really impress your guests.)
- Experiment with other nut/seed butters, such as sunflower seed butter or almond butter.
- The pumpkin soup in the photo has a dollop of ‘cheese’ sauce for added creaminess.
