Our mozzarella alternative has been two years in the making, with our super-patient food technologist working his way through literally hundreds of formulations to achieve this: something that looks like cheese, tastes like cheese, slices and grates like cheese, and melts like cheese… but contains no dairy ingredients.
As far as we know, this is the first time that a dairy-free cheese alternative has been made on a commercial scale in New Zealand. We’re pretty pleased with ourselves!
