A friend of a friend had beguiled some omnivores by marinading this product in my 'tempeh bacon' marinade. I love trying new ingredients, so I got hold of some quick smart (at Blissful Foods in Mt Albert).

I defrosted it, chucked it in a bowl with an eggplant/aubergine sliced into strips, invented a marinade based on olive oil, soya sauce, sugar, chilli and cinnamon, and let it sit for about an hour. At the last minute I decided some chopped dates would be nice with it (and I was right!), so I chucked some of those in, too.
I sauteed some onions and garlic, and then added the yuba, eggplant and marinade. The eggplant needs cooking longer than the yuba, so next time I'll add the eggplant first.
I must make this again, and jot down the actual quantities - I know not everybody likes to freestyle their cooking like I do.
The finished plate, looking out of focus because of the steam! I served it with pearl barley and blanched spinahch.

Yum!
The vegan buffet in Hamlilton makes a delicious dish with this stuff, i'm pretty sure they sell it to!
I wish we had some more vegan friendly cafes here though for sweet stuff.
