Preheat oven to 200C
Prepare the pie contents:
Half a bag of edamame, defrosted
2 medium carrots, diced and steamed until al dente
2 minced cloves of garlic, one finely diced onion, 1 cup of sliced mushrooms, all sauteed in a tiny amount of olive oil for 5 minutes
1 pack of Angel Food Cheesey Sauce Mix, made with 2 cups of rice/soya milk instead of 3 cups as per the pack directions
1 large kumara, steamed and mashed (I added tahini and white pepper)
Grease a pie dish and line it with puff pastry (I use New Way brand).
Mix the edamame, mushrooms and carrots into the cheesey sauce, and put it all into the pastry case.
Top with mashed kumara and, if you like, strips of pastry or a pastry lid.
Bake for about 20minutes, until the pastry is golden brown and crispy.
