Dairy and soy free. Can be made gluten-free.

Ingredients

  • 3 cups
    dairy-free cheese sauce
  • 2 cups
    dry macaroni Use gluten-free macaroni if required.
  • 1 Tbsp
    dairy-free pesto (e.g. 1 cup fresh basil leaves, 2 tablespoons chopped nuts, 2 tablespoons olive oil, 2 tablespoons dairy-free parmesan, salt and pepper to taste)
  • ¼ cup
    sundried tomatoes, chopped
  • ¼ cup
    dairy-free mozzarella Grated
  • Dairy-free parmesan To top

Instructions

  1. Step 1
    Prepare/heat cheese sauce.
  2. Step 2
    Cook and drain macaroni.
  3. Step 3
    Stir cheese sauce, pesto and sundried tomato gently through cooked pasta.
  4. Step 4
    Divide between individual oven-safe dishes, cover with mozzarella, sprinkle with parmesan and grill for 3 minutes until tops are browned.
