  • 6
    sprigs of fresh thyme
  • ½ tsp
    ground white pepper
  • 2 Tbsp
    non-dairy milk Use rice milk if soy-free. Choose gluten-free milk alternative if necessary.

    Angel Food dairy-free parmesan alternative


  1. Step 1
    Trim the leek and slice it thinly. Rinse thoroughly, and drain.
  2. Step 2
    Put the leek into a medium pan on a medium heat, without adding any oil. The leek should be wet from the rinsing. Strip the leaves off the thyme, and add those too. Cook gently. If all the water evaporates, add a little more to stop it from sticking.
  3. Step 3
    When the leeks are cooked to your satisfaction, remove from the heat and add the non-dairy milk, the white pepper and the parmesan alternative. Stir gently.
  4. Step 4
    Serve topped with more parmesan alternative.
