Vegan Meringue Cookie Mix

Crispy meringue cookies are light, crunchy little mouthfuls which used to be impossible to make without egg whites – not any more!

It's a little box but when you add caster ('super-fine') sugar, water and vanilla essence, it whips up a huge batch of 100 cookies. But don't worry that you'll be drowning in meringues, the recipe gives the quantities for making about 25 cookies at a time.

The mix also makes a wonderful baked Alaska and lemon meringue pie topping, so get cracking (all puns guaranteed egg-free) and get creative!

Ingredients: rice starch, emulsifiers 475 and 471, tapioca starch, methylcellulose, xanthan gum. All ingredients are plant-derived.
